It's that because all Americans outside of Texas are vegans?

Perhaps Toyota US thinks a “green” hybrid should kill as few animals as possible. I know that for some strange reason they class Hybrids as being neither cars nor trucks on their website.

I strongly believe that Toyota US needs to list their Hybrids with their cars and trucks before they can be considered as mainstream.
Categorizing them separately says they are some sort of oddity. We need @Prius Team to fight that internal battle for us.

We got one of the first few dozen Gen4s sold in the state, and encountered much the same thing. We actually really wanted the beige, because we had gotten so tired of the gray/charcoal/black interiors we'd both endured for the past three decades and I had fond memories of the beige velour in my 1983 Pulsar NX, the first new car I ever bought (the car was accurately described by one car mag as a "Sentra with a mohawk", but given the alternatives on my budget it was by far the least boring). Anyway . . .

We weren't much concerned with cost and the mega dealer was willing to bring in a red Three with w/ATP and a beige interior from an out of state store at some discount off the sticker, so we got exactly what we wanted. But yeah, there were VERY few anywhere in the country even then.

We've found the beige visually warm and pleasant, taking a bit of the edge off the Prius-typical relentless modernity of the Gen4 interior, so it's puzzling that it's so infrequently in inventory. Maybe it's because it is the interior color that clashes worst with the porcelain appliance between the front seats (which I've grudgingly grown to tolerate since seeing the night time advantages). Still waiting for a third party to clone the official piano-black "band-aid" applique kit in different colors - I'd go for a mocha marble if I had my druthers.
