Salt Typhoon -- would someone 'plain?

Even prior to these Salt Typhoon reports, SIM swapping could be a thing. You would know as soon as you noticed your phone not connecting, but the horse is out of the barn by then.

I do not remember my 'bills and banking' device HAVING a SIM......

 

They've actually tightened up security on that over the years. You'll still need to reinitialize all your logins and pass codes, if you remember them. They used to give you a new sim card and move all your data over using their sys admin. They are no longer allowed to do that. Apple store employees are suppose to ask for ID, to make sure your you. and you have to login to your apple account yourself, that's why it's so important to have that second authorized device.
The SIM swap will only allow them to get your 2F2 pass code, they'll also need your bank login & pass code to initiate.

 

The services that allow you to use a TOTP token or app, instead of SMS, eliminate even the chance that an adversary can intercept a 2F code being sent to you at all.
