A stale stereo is motivation for you to trade in the car for a newer model. That's where they have real profit potential. Even if they normalized prices to get the same unit profit out of the upgrade kit, are you ready to drop a few thousand on it?

There are some cracks in the wall. Mazda is doing this. Subaru offered an upgrade for the 2013 Legacy & Outback. There are probably others. Perhaps eventually the tide will turn.

I've long preferred switching to an aftermarket system immediately upon delivery. Then I can upgrade as often as I like later.

Because they probably don't think the investment is worth the payback that they will get. I would prefer carplay, but I really don't miss it that much and the lack probably would not significantly impact my purchase decision. Entune as crappy as it is, it has reliable Bluetooth integration with my iPhone an consequently is good enough for me. Of course my standards are not that great as my my trade-in was a 2003 MINI Cooper S and my other car is a 2007 Honda CRV. What I miss now are dedicated knobs and buttons instead of better iPhone integration. Trying to hit buttons on a touch screen while the car is bouncing down the road can be challenging at times.
