If you can find the time and have a clear day, I highly recommend driving over the Beartooth Pass and entering Yellowstone from the NE entrance. You can also drive up on one of your days in the park - early morning or late evening are your best chance of seeing grizzlies and wolves in the Lamar Valley.

The Missoula Independent Online - Viewfinder

My favorites in the park are the geyser trails all around Old Faithful Inn (check the sign boards for anticipated eruption times) and also the hot springs in West Thumb Geyser Basin on Yellowstone Lake. I'm so jealous - have a great time!

Take a (non-midday) walk around Daley Ranch in Escondido (near Rancho Bernardo)

I like the 'rock shop' in old town san diego.

    Missing the grand canyon? oops.

Trini and Manuels' burrito in Las Cruces before White sands. Also, just after organ pass, side road on left to Aguirre Springs.

After White sands, the solar observatory in the Sacramento Mountains.

This schedule is way too tight - triple the time and we could fill it with worthwhile stops.

    Tires at/above 45 psi, right ? :)

Haha about In-N-Out! I didn't realize you were from Cali.

Hmm, here are some more California suggestions, but maybe you've already been to these places:
Apple campus in Cupertino - if you're an Apple fan
Intel museum at their HQ in Santa Clara - if you're curious about chip fabrication and want to see a working large scale model of the 4004 [first microprocessor] powering the calculator it went into
17-Mile Drive (17-Mile Drive - Visiting 17-Mile Drive - Carmel California) or the alternative free drive - not exactly close to SF though
Dynasty Chinese Seafood Restaurant - Cupertino, CA - FWIW, I'm Chinese and my parents and I like the food here.
Mayflower Restaurant - Milpitas, CA - Ditto about above comments. Make sure you don't go to the smaller Chez Mayflower in the same mall.
Ming's Online: 1700 Embarcadero Road, Palo Alto - good for dim sum but a bit pricey for Chinese food. Also had wedding reception food there before.
http://www.newkrungthai.com/ in San Jose - I like the food here. Some of my favorites include their Thai style Beef Salad (I think it's Neau Nam Tok) and pad thai.
Castro Street in Mountain View has a lot of restaurant choices. I like http://www.amarinthaicuisine.com/ but there are probably lots of other good choices.
Stanford University - nice campus. You can get a view of campus from Hoover Tower : Stanford University.
Sam Woo chain of Chinese restaurants in So Cal - The ones in areas like San Gabriel, Alhambra and Monterey Park should have fairly good Chinese food. I went to one in that area w/a friend a few months ago.

I'd only hit the restaurants I've mentioned if you happen to be in the area. I wouldn't drive ALL the way from SF to Cupertino just for Chinese food.
(You've got to take Yelp reviews w/a grain of salt. Yelp seems to have some shady businesses practices. A friend's wedding photographer told him about the crap Yelp has pulled.)

On your way down to Torrance, hit an In N Out Burger. Best hamburger anywhere!!
Ooops, saw earlier post. I will add, get a 3 by 3 with whatever you want on it.

When in Pennsylvania about 45 minute to an hour drive East of Lancaster on the PA turn Pike North of Philadelphia is Bucks County, if you get off at Willow Grove/Doylestown exit and set your Nav for New Hope PA along the Delaware River it is a Beautiful drive along the river, there is Washington's Crossing to the south. New Hope has a lot of good restaurants in the middle of town, There is the Ivyland New Hope Rail Road, the Bucks County Play House (Think it was owned by Jean Stapleton, remember Edith from All in the Family) Lambertville is across the bridge into New Jersey. You could easily spend a day walking around Historic New Hope, shops, places to eat. They have the Triumph Brewery, many local Wineries in the area. I have seen horse draw carriage rides there on the weekends. It is a beautiful little town.

West of Lancaster, you have Harrisburg and the drive up along the Susquehanna River through the mountains is also beautiful. Lots of photo ops both places.

If coming up from Tennessee before you get to VA and Interstate 81 is awesome, there is the Lost Sea and underground lake, then in VA there is Laurie Caverns, the Natural Bridge also a Wax Museum in the town where the Natural Bridge is. Thomas Jefferson's home Monticello is a must see. There is also the Skyline drive that parallels 81 coming up. VA is a long drive, so it is nice to break it up with some stops. 81 will come right up into central PA and you can take 11 & 15 east near Carlisle PA and head over to the Susquehanna river and drive for several miles up along the river by Harrisburg. At Harrisburg you can then take the PA Turn Pike east to Carlisle and then Buck County, note in Harrisburg to look South of the Turn Pike Bridge on the river and you can see Three Mile Island. While in Bucks remember Philly is just South and Center City/Penn's Landing and South Street have ton's of places to see and eat and that area of the city is pretty safe, not a bad area of Philly at all. From Penn's Landing you can see the Battleship New Jersey (One of the remaining Iowa Class Battleships) docked across the river at Camden. Philly has tons to do, comedy clubs, the art museum, the Franklin Institute of Science, the Philadelphia Mint, Historic Philly, Betsy Ross's House, Independence Hall, the Liberty Bell. They have a short cruise along the river with dinner and Music on the Spirit of Philadelphia, the is the Philadelphia Zoo, catch a show at the Kimmel Center, the acoustics in the Kimmel Center make the old Philadelphia Orchestra Hall sound like a tin can.

You won't have trouble finding things to do. Happy trails. :)

While down south if you see a Red Hot and Blue, they have good ribs. :)

When you are around Racine, WI you might zip on over to the Wisconsin Dells.
