We used to have a source of fairly thick soft felt. It came in rolls and had a fairly decent adhesive. For larger gaps it could be rolled up with the adhesive side out and pushed into the gap.

in my 04.. i used standard foam (weatherstipping like foam... only an 1/8th of an inch thick or so... probably less. i started with the areas i found the most rattles (on here it was mentioned the best way to find them is to hold a tube to your ear to pinpoint) the doors.

it gets tricky... the inside armrest rattles at the grey plastics... pull strait up to disconnect. the little grey pieces near the tiny mirrors... and there are a few other places.

there are a few rattles i can never get to go away... where the grey and burgundy meet at the doors (it's crimped together and makes it a bit hard to squeeze anything in there)... i may one day use caulking... the other area i can not/will not ever be able to keep from rattling.. the actual door switches! the connectors inside rattle if there is enough bass...

I was just at the local home center and super glue has a special formulation for foam and plastic, it might be handy in certain instances. I've repaired broken plastic interior pieces by tacking them together with a soldering iron. Once you get them stable you can use super glue in the crack and use a super glue accelerant to form a strong bond.
