Does anyone else have to hit the brake pretty hard to disengage the cruise control??

Define pretty hard. I think I may have noticed it once. Do you mean harder than your previous car, or actually really hard?

You can just pull the cc stalk towards you to cancel it without losing the memory of the setting and resume when desired.

If you need to hit the brake pedal hard, its 'brake light switch' is not adjusted correctly. This can be a real safety issue because it means that your brake lights are not glowing red either during light stops. Get it adjusted.

I've got a habit of canceling CC by pulling back on the stalk for the CC rather than using the brakes...then I can better control my braking to maximize regen to the stop point...if I even need to stop.

I use the Cancel on the CC most of the time, but when I use the brakes it cancels pretty quickly without a lot of pressure.

I usually use the cancel method. In the rare occasion that I use the brake to cancel CC, just a tap is enough.

Use the cancel feature of the CC stalk. Just pull it back. Bad form to use the brakes as your CC cancel, unless necessary IMHO. Unnecessary brake lights on the highway just cause an unnecessary ripple effect in the traffic flow.
That CC stalk is in the perfect position and is the most intuitive CC I've ever used.

When I cancel by using the brake it just requires the slightest touch of the pedal.

There is a switch on the brake pedal assembly that signals both the brake lights and cruise control cancel. Based on what I have read here it is fairly common for this switch to be out of adjustment, requiring a fair amount of pedal travel to engage. I noticed odd brake light performance and adjusted mine so as not to get rear ended. This should solve the cruise control issue as well. Here's the thread where I explained what I did:
