My battery display on the MFD always loses a bar or two when I park the car for a couple of hours. Is that normal?

Depends. Usually, if you park when the battery SOC is at a border of two bars, it'll drop to the lower bar when you restart. Note that for it to go up a bar, it requires a bit more juice.

e.g. let's say to go down a bar, it has to reach a value of 5 (arbitrary number) and to go up, it has to be a value of 7. So, if you're coming down from 10, it won't change til you're at 5 but when you charging back up, you have to get it up to 7 before it'll add a bar. This minimises flickering between bars as the SOC changes
