There is no way to have the iPod send it's display image out the video cable. You are correct - it was not designed that way.
If it's a year old, then it's not an iPod Classic. It's probably a 5th Generation iPod video. The Classic hasn't been out that long.
You CAN replace the factory radio, but it will not have any integration with the MFD. There are install kits that allow DIN "E" radios to fit.
