Any idea what's the logic (or lack thereof) of having the channel and temperature buttons on the steering wheel operate in opposite direction? DOWN - channel - UP UP - temperature - DOWN
They don't operate in opposite direction than the label on them. But they are placed so they operate in opposite direction to each other. In other words, the left channel button changes the channel down while the left temperature button changes the temperature up.
Well, the channel button is keep in line with the SEEK TRACK button on the dash. However, with the temperature button, the left is slightly higher than the right, hence up (left) or temp up and the down (right) button for temp down

I think part of why it was done like this to keep symmetry to the buttons on the right side of the steering wheel. The positioning seem completely intuitive to me.
oh i see what you mean now. but at least the temp isn't horizontal... being diagonal it makes sense that the temp up button should be higher. think about it: if you switched the temperature buttons around, it feels like you are moving your thumb down to turn the temperature up
