I'm pretty sure they don't. My recollection from my research prior to buying were that the differences involved wheel/tire size, suspension, and HID headlights standard on the Touring edition. I think that was it. I think I got the info from Toyota.com as well as fueleconomy.gov, which uses edmunds car data to compare everything about the vehicles you're interested in (engine specs, interior and exterior dimensions, etc.) in addition to EPA mileage estimates.

My beau is 6'5" and only fit in the standard edition Prius with cloth seats that I rented by sitting hunched over sideways in the passenger seat, but is able to fit comfortably in my touring edition with leather seats. For him it was an issue with not having enough room under the glove box for his knees in the standard/cloth, whereas it seems he sits a little lower in the touring/leather which gives him the extra room.
