This is strange. I have had a 2007 package 6 for about a month now and, when I put gas in it for the first time (after about 500 miles), the average MPG and miles traveled reset to zero. I thought, hey, nice feature. Track your mileage per tank etc, etc.. Hasn't done it since. I had read somewhere that it would reset after putting in more than X gallons and then driving X feet. No. Mine reset by itself once and only once. Not a big deal, I can push a damned button, but the fact that it did it by itself once makes me curious.
That's odd. I thought I remember reading that the '04/05 automatically reset after more than three gallons and one full rotation of the tires. The '06/'07, however, does not reset automatically. I have no idea what would have made yours reset automatically just once. BTW, if you're looking for a spreadsheet or something to track your mileage, 'd be happy to send you mine. Many other owners around here have their own versions as well.
I've got an '07, and mine never resets by itself. Not sure what happened to yours. As far as tracking mileage: I always carry a digital camera and take a picture of the MFD in Macro mode. The pic always comes out great, and I can then send it out to all my hybrid-virgin friends. I have already convinced two of them to go hybrid through this method.

I believe there is something in the owner's manual about it. You do have to wait a while for it to reset as the fuel gauge takes some time to creep up to full. We always hit the reset button anyway to reset the MPG as well.
I was just checking on this yesterday. Here is the information as listed in the '07 Owner's Manual. p. 168, Paragraph 4 When the "Reset" switch is touched or more than 10L (2.6 gal., 2.2 Imp. gal.) fuel is supplied, the average fuel consumption is reset. I'm not convinced this is entirely true. When I filled up the mileage reset to 0, but the average MPG stayed the same. If you touch the reset button on the MFD it resets both to 0.
