In the Drive Monitor screen, when the "Elapsed Time" rolls over (and at what time does it do it?), what happens to the "Average Speed" and "EV Driving Ratio"? Hopefully they keep on going, otherwise they would be quite useless.

Assuming you are asking about Gen4 PP. It rolls over after reaching 99:59. Simply goes back to 0:00 at 100 hour mark. Average speed and EV Driving Ratio continues counting without resetting.

I kept record of that information on each gas fill-up for as long as I owned my PP, though the longest was less than 3 years on 2017 PP.

So if my Trip B counter shows 2155.5 km and EV ratio of 64% and I know it rolled over once, to know how many km has the engine ran, it would be 12155.5 * (1 - 0.64) , so 4375,98 km, right?

Correct. My life time EV ratios on three Gen4 PP were 60%, 58%, and 63%.
