I've looked at the "normal" selections I've found on CarID.com and similar sites, and I've tried a couple of types but haven't been impressed.

So ... does anyone in the sub here have any recommendations for a decent dash cover, and good seat covers (hopefully seat covers that are easy to take off and clean since I'm a slob).

    TIA.

If you get a choose a dash cover, get a black one.

Light colored ones cause a really bad reflection on the windshield. I bought a beige one initially but switch it out for a black one.

Personally, I love really sheepskin seat covers.

Hospitals in the NICU use sheepskins for premature babies who have to spend hours and hours in an incubator.

Sheepskin seat covers are warm in the Winter and cool in the Summer.

+1 on getting a dark colored dashcover.

Sheepskin? I had genuine Merino sheepskin seat covers in two of my vehicles... in 1990 and 1998 lol.

The OP says they're a "slob", so unless they want to shell out for dry cleaning, I think sheepskin is out.

Nowadays, I prefer neoprene or "wetsuit" material for seat covers. They are water proof, so rain and other liquids can be easily cleaned off. Get a good quality one that is a bit thicker. It will be much more durable.

what price range are you looking at?
I've never had any trouble slipping any ole set of covers over the seat backrests. The seat bottoms are another story. They are just enough bigger than a lot of other cars that the covers I've gotten never really fit on the bottom of the seat, until these

Any price range. I came very close to buying a 2024 Prius Prime but instead decided that my 2018 with only 36k was "good enough" to keep and run it into the ground. So I'm not fussy about the price.

And you're right, the bottoms are the key. In that 2018 the seat covers (I have neoprene ones on it now) are a "one piece" unit, so that makes them a PITA to remove to wash them. IMO it's only the bottom that's the problem -- that's where I drop stuff and slop drinks, etc.

So I'm looking for something that's good quality and is easily taken on/off to be washed.

Why would you get a dash cover?

You don't live in the Southwest US, like Las Vegas or Phoenix, Arizona.,

LOL, indeed I don't. Is it because it gets destroyed by the scorching sun or to have a lower inside temperature by using something else than black?

I have been using sheepskin seat covers for 45 years, and love them. If you spill a lot of stuff, you can always put an incontinence or pet-pee pad inside a pillowcase and put that on top of the seat cushion. Amazon will probably suggest Subscribe and Save for the recurring "spills".

I've always been worrying about airbags obstruction now that seats have airbags in them.

No problem. There are side cutouts that allow the airbags to work.
