Two thoughts; yes, the Prime will switch to hybrid mode once the phv battery is low. Also, there are higher power inverters [connect to the hybrid battery] available too.

Where can I find info on that? I have a 3K inverter I'd like to use. (Or can I connect that to the 12v battery if I promise to use only 1k of it?)

Our consolidated thread on that topic is this one over here.

The input voltage rating of the inverter will determine that. If it says 12 volts, you can only use it on the 12 volt system. Inverters made for connecting to the high-voltage system are more rare, and you will have to see an input voltage rating that covers the voltage range of the Prime high voltage system.

What you promise doesn't matter. Whether you keep the promise does. :)

My thinking is that you can pull much more then 1 KW for a short period of time, the battery should handle that. 1 KW would be the limit for long periods of time, as then the charging system needs to work.
I have 2 1 KW inverters working, one for each phase of the house (can't get 240VAC that way, but each phase is OK.) I did a test with that last year, and everything in my house, except the AC which is 240VAC and draws too much current anyway, works fine. Many of the new appliances, refrigerators, etc. use DC motors, so pure sine wave inverters aren't a problem for them.
