I choose ECO for the A/C savings, i spend 95% of my driving using cruise control so my foot is not really driving in any mode.
Maybe an even more apt and less hyperbolic example than you thought you were giving, when you remember that you can get those control knobs in either "linear taper" or "audio taper", and why that is.
