I have the bright white moonstone interior and it doesn't get too bright. It's brighter than the Harvest Beige, so you should be fine. If you're sensitive to reflections, then you might be better off with black. When I say reflections, I'm not talking about like a mirror.
I have harvest beige, and its a really awesome interior color combo, I havent particularly noticed anything bothersome about glare, but now that you have mentioned, I will now certainly be looking for it now... and will report back if I notice anything, but so far so good. like the above poster says, the moonstone is brighter
Harvest Beige here, absolutely love the color and find no issues with sun glare. It appears that Harvest is somewhat a limited color based on our Philadelphia area search two months ago.
I have the harvest beige and it has no obvious glare. I love this color. It compliments the small amount of white on the console.
It's kind of odd, but at certain times of the day my Harvest Beige dashboard will have a reflection on the side windows. I've never really noticed a glare, or reflection up into the windshield. If it's there, it's not very noticeable by me.
Another Harvest Beige owner and I think the color combo is great and no particular glare that I've noticed. The only thing about the interior I've noticed (and this is not particular to the beige) is that the piano black surfaces around the touch screen pick up a lot of fingerprint smudges over time. I've taken to carrying a small microfiber cloth with me (the kind you use to clean sunglasses) to polish it down from time to time.

I wanted to go with Harvest Beige but after looking at 4 car dealerships across all of Iowa I couldn't even find one to look at - no matter the level of Prius. I even checked at Kansas City dealers and nothing - no idea why this is so difficult to find. I asked my dealer and he said that white is the most popular - but I really didn't like the look so ended up going with black leather. Besides the heat in the summer I love it!
You can gladly have my old man Harvest Beige! (I want that cool looking black & white Stars Wars interior! )
I'm a black interior and white/black exterior car sort of guy, but I somehow on the lot I ended up with the most interesting color combination out there, seaglass + harvest beige

Yeah, Star Wars. That's what I GOT. I'm going to order some themed license plate frames. I'll have to see what else I can do to it. As far as reflections go.... The dash is split colors for a reason. The light color does reflect but that usually happens most up in the area where windshields are usually darkened a bit. It's there but it's something you either can't stand or don't see. I found the reflection from the black part of the dash (more forward) to be more of a problem but not terrible. Oddly enough, the strongest reflection from the light colored dash is in the left window next to the driver's seat. I kept looking to see if the window were dirty. None of these reflections are persistent. It depends on the time of day. And I think that for most drivers it is no issue.
