Does anyone know a specific brand and model that fit in the empty spots on my dash? All I have been able to figure our is using factory ones, but I would like a cheaper option.

Try searching "light switch toyota" on ebay. There are many, but I think Corolla will fit the Prius well. You can see they are a bit more "square". The selction of symbols might not be the greatest, but hopefully you'll find something.
I use these switches, they fit perfectly: http://pages.ebay.com/motors/link/?nav=item.view&id=321194133874&alt=web I'm not sure of the switches current limit, so I only use them on circuits that use relays, on the coil/trigger side of the relay. The wires on the switch are very thin, so they probably can't handle much.
