I have an iPhone 6+ and a 2007 Prius, and have never had problems connecting via Bluetooth. However, voice dialing via Siri and the iPhone 6+ has been broken since day one, which is a problem I never had with my iPhone 5. Can anyone confirm if they also have the issue? Basically, if you try to voice dial by saying something like "Call my wife", Siri will start the process (a call attempt will show up in my call history), but it will fart when actually trying to make the call, as in it never even starts to ring the person on the other end. If I disconnect from Bluetooth and try the same thing just with the handset, all works fine.
I have had similar issues with my Prius. Try updating to the latest iOS as they have had multiple bluetooth issues with the release of iOS 8. Restart your phone, delete and re pair them.

I actually hoped 8.1 would fix it since the release notes said it resolved some "Bluetooth issues", but it was actually loaded before I posted this thread (but didn't resolve the issue, obviously). I may try re-pairing, but the connection doesn't seem to be the issue per se: I can still make Bluetooth calls, it's just that voice dialing is borked.
My wife's 2014 PiP Advanced is having the same issue with her 6 plus. It works to make or receive calls via BT. But Siri is not working Have not upgraded to 8.1
