Nobody cares how much headroom is lost with the sunroof option?

I don't. It doesn't intrude as much as a regular moonroof. Thankfully, even though I'm tall, I fit in most cars with a moonroof (guess that means i'm long in the leg not torso).

Technically (am I really gonna establish myself as a "technicality bastard"?) with a sunroof, your headroom is limited by the lowest overpass.:D

The Prius sunroof is a "up and over" if I remember correctly, so I imagine headroom impact should be minimal compared to a typical in-built one.
