To my knowledge, there isn't one. It only shows momentarily when one enters a new speed limit zone. You CAN put it up all the time on screen 2 though....
In the small screen next to the speedometer screen on my gen 4 on the compass/navigation menu there is a constant speed limit sign. It's close to the HUD, but I've never gotten my HUD to always display the speed limit.

Just checking back in to see if anyone has developed a HACK to break into the system and get what we want to display and not just what they want us to see?
But...the speed limit shown in the HUD isn't necessarily correct. They show what is in the maps from the vendor the car maker uses for the nav system. The local authorities may change the actual limit, some months later the vendor updates their maps and ships it to the auto maker, maybe later, maybe never, the driver pays for and installs updated maps.
it is because of this that I have gone exactly the opposite direction and turned speed limit signs completely off.
I had to find it; it's been a while. In my 2017 Prius Prime Owner's Manual, it's on page 233. Basically, go to "Meter Customize" on the dashboard and select the "Speed Limit" option. Change it to OFF. I hope that's the right one.
