I bought a 2014 Prius on Friday and love it, but half of the paperwork said it was a Prius Five and the other half said Prius Three. I've done quite a bit of research, but nothing conclusive. What is it?

Go out to the car and take a pic of the headlights, then we will tell you three or five. Three had halogen, five had led. If you know for certain what you have without showing us a pic (led or halogen), you can decipher now what you have without sharing the pic. There are more ways to tell but this is one easy quick one. As more FYI, LED for 2014 had two projector beams in each headlight assembly, halogen had one projector beam for each headlight assembly.
A Three will have fabric seats, a Five will have Softex. A Three should have 15 inches wheels, P195/65R15 tires, unless changed later. A Five should have 17 inch wheels, P215/45R17 tires. A Five should have auto-dimming rear view mirror, a Three should not. A Five should have fog lights. (The LED lenses under the front turn signals are not fog lights, but instead are DRLs and on all trim levels.)
How did you determine the value of the car if you didn't know what you were buying? Need more pictures of the car to really know the package
If that link to the website is correct, that looks like a Five to me. It has the LED headlights, 17" alloys, SofTex seats.
I'm guessing you didn't buy it from a Toyota dealer. You can go to the Toyota owners site, create an account, and enter the VIN. That should give you the model number (and any maintenance records that were done at a Toyota dealership). I bought mine from dealer that wasn't a Toyota dealer. They had it listed as a Two, and it's a Five. I didn't haggle much on the price because I was worried they'd figure it out. The finance guy did say something, but by that point, I don't think he felt it was his job to let anyone know. I was pretty sure the salesman would be little help with questions about the car. I didn't have to actually worry about asking him because he fell asleep (twice) during the test drive.

It's posted now. Fuzzy1: I looked at the tires and it has the P215 ones. I don't really know how to tell if the mirror is self-dimming or not. And I don't know what a fog lamp is... Caniac: Which link were you referring to? JC91006: I thought it was a Five. I paid $18,500 for it and they gave me $5,000 for my trade-in when it was really only worth $3,500. It has 18,300 miles on it. So I figured if it was a Three I got a decent deal and if it was a Five then I got a really good deal. Either way, I was in love with the car. But it's the biggest dealership in the area and so they have a lot going on. Sounds like you got a great deal! Haha, sorry! That was my autocorrect. But can you really already tell it's a Five? Because that would be friggin' awesome!
The pic you posted shows the twin LED lowbeam projectors, therefore, it's definitely a five. Also, the 215 tire size you mentioned earlier was incomplete. It should be 215 60R17 or something like that, with the last two digits being the rim diameter. 17 inches being the rim diameter standard on a level five trim.
Oh wow! I'm so excited!! So $18,500 for a 2014 Five with 18,000 miles IS a good deal, right? I didn't do bad research? I was so rushed at the dealership and the purchase was a little bit of a whim, heh. Also, here's a picture of the tire, too. With the additional info for xlid.
That is what a Five is supposed to have from the factory, though some owners put those on lower trim models after purchase. The round lights next to the lower grill are fog lights. And as others have confirmed, the pictured car is definitely a Five.
