I have a Prius v Two and want to upgrade the rims and thinking of buying a set of Corolla's Rims and Tires. Would they fit without issue?

Just a hunch, you'd be needing Camry rims.

I believe some Prius v owners have used a Camry steel rim with snow tires. Check with an authorized Toyota service department?

^ Why would you need to check with an "authorized" Toyota service dept.? These are just commuter cars haha. If the specs match, they match. Bolt pattern, offset, center bore size.

114 x 5 is the bolt pattern for the Prius v

    Actually, it's 114.3 mm or 4.5 inches. ;)

Why not? They have the experience. And their prices aren't that outa line.

Turned out an '06'ish Corolla steel rim was a perfect match for our 2010 Prius. A dealership set us up with rims for $70 apiece, with X-Ice, and the compatible lug nuts.

Prius v owners here have been using a Camry steel rim on a few occasions.

No it wouldn't fit because the Corolla's bolt pattern is 5 x 100 whereas the Prius v is 5 x 114.3 as noted.
